Pappardelle is one of the widest types of pasta in Italy – about 2-3 cm wide – and its name comes from the Tuscan dialect word 'pappare', which means 'to eat with pleasure'. And it is truly enjoyed with pleasure!
Wide, elastic pappardelle is perfect with heavy, meaty sauces, as it holds the sauce perfectly. La Favorita makes this egg pasta by hand in Piedmont using durum wheat flour and fresh eggs according to a traditional recipe.
Use: Cook in salted water until al dente, about 3-4 minutes. Traditionally enjoyed with wild boar ragù (ragù di cinghiale) - one of the best dishes of Tuscany. Also goes well with beef ragù, mushroom ragù or duck ragù. Also great with lighter sauces, such as tomato-basil sauce or lemon-butter sauce. Perfect as a side dish for game dishes.
