Pedro Ximenez sherry vinegar is distinguished from other Capirete sherry vinegars by its sweet taste. It is made from grapes of the Pedro Ximenez variety, known for its rich, sweet flavour.

The grapes are picked when fully ripe and then left to dry in the sun. This further intensifies the sweetness of the grapes.

In addition to the sweet taste, you can taste aromas of raisins, figs and quince from sherry vinegar. It has a thicker consistency than regular vinegars, making it ideal for glazing, salad dressings and marinades. It is also widely used in Spain to finish grilled meats, cooked vegetables and fruit salads.

Description

Capirete sherry vinegars are produced by José Páez Lobato's sherry vinegar estate in Cadiz, Spain. It is known for its high quality sherry vinegars, whose production and know-how have been handed down from generation to generation.

Legend has it that the founder of the house even invented the production of sherry vinegars.

The grapes used in the vinegars have been allowed to grow in perfect conditions for the vinegar production. The dry and arid climate is always cooled by occasional cool breezes from the Atlantic, the Mediterranean and the Guadalquivir River.

Sherry vinegars are made using the traditional method of ageing in old American oak barrels. Capirete sherry vinegars have been awarded the DOP designation of origin, which attests to the traditional method of production.
