The oldest of the Capirete range, Gran reserva sherry vinegar has been aged for at least 50 years in oak barrels. It is made from grapes of the Palomino variety, typically used for sherry production.

Gran reserva has a very recognisable round, dry and broadly textured flavour with deep acidity. It also has aromas of aged wine and oak. The finish is acidic with dry fruit and spices.

Description

Capirete sherry vinegars are produced by José Páez Lobato's sherry vinegar estate in Cadiz, Spain. It is known for its high quality sherry vinegars, whose production and know-how have been handed down from generation to generation.

Legend has it that the founder of the house even invented the production of sherry vinegars.

The grapes used in the vinegars have been allowed to grow in perfect conditions for the vinegar production. The dry and arid climate is always cooled by occasional cool breezes from the Atlantic, the Mediterranean and the Guadalquivir River.

Sherry vinegars are made using the traditional method of ageing in old American oak barrels. Capirete sherry vinegars have been awarded the DOP designation of origin, which attests to the traditional method of production.
