HOJIBLANCA olive oil from the Spanish company Oro del Desierto is an early harvest oil, meaning it is made from the first olives of the harvest, picked in October. It is also a monovarietal oil, which uses only one variety of olive from the same region.
Description
The organic extra virgin olive oil, whose production is limited, comes exclusively from hojiblanca olives harvested in early veraison from the company-owned farm "el Vicario".
Collection: from the end of October to mid-November.

Area: Finca el Vicario, Tabernas Desert (Almería)
Combination: recommended for green salads, toast, cream cheese, meat sauces, cold soups, salmorejo, garlic. And usually for use at low temperature or cold, it is an oil with a very high organoleptic value, a medium stability of variety which, together with an early harvest, gives this oil a longer than usual shelf life. Its polyphenol content varies between 450 and 700 mg/kg depending on the batch or vintage.
