Description
Bodegas Barbadillo has been operating in Sanlúcar de Barrameda since 1821. The house's soleras are over 200 years old and produce four sherry vinegars - this Pedro Ximénez version is the sweetest and roundest of them all.
The vinegar is created from the spontaneous acidification of Manzanilla sherry and matures for years in a traditional way. Soleras and Criaderas -method: younger vinegar is gradually transferred to older barrels, so that each bottle ends up with a touch of very old vinegar. Finally, it is matured with sweet Pedro Ximénez wine.
The color is dark mahogany. The aroma is soft vinegary and hints of old sherry, with raisins and plums. The taste is slightly sweet and soft, but the elegant acidity still carries through - the aftertaste is long and raisiny.
Excellent for meat dishes, game, cheese-based salads, making sauces and desserts. Especially good for caramelizing onions and with sweet and sour dishes.
