Description
Château Virant is a Provençal family estate from Lançon-de-Provence, Bouches-du-Rhône, where olive oil has been produced for generations from its own olive trees growing around the estate. The estate is certified HVE 3 (Haute Valeur Environnementale), the highest environmental certification in France, and all oils carry the ”Huile d'Olive de France” label.
This ”Olives Maturées” (ripened olives) is a specialty that revives an ancient Provençal method, also known as old-fashioned taste – ”the taste of old times”. The olives are harvested when fully ripe and allowed to ferment in a controlled manner for a few days before being pressed. This natural fermentation gives the oil deep and captivating aromas: black tapenade, cocoa and forest floor.
The profile is soft and nuanced at the same time. It is a limited edition, and more and more top chefs are looking for this oil of forgotten flavors. Use as a finishing touch: a drizzle on ratatouille, mushrooms, mature goat cheese or grilled shrimp – or even for dessert, with ripe pears and apples.
