These Italian apricots are allowed to ripen just right on the trees and not in cold storage. This way they are juicy and full of flavour at the time of picking. After picking, they are immediately taken for canning.
These small apricots, about the size of a walnut, are gently cooked and preserved in a sugar syrup made from cane sugar. The result is a wonderfully tasty and slightly nutty tasting preserved apricot that tastes like it came straight from the tree.
